Fresh Sesame Chicken & Cucumber Salad
This recipe is fantastic for a mid-week meal, especially when you're experiencing a Crohn's or Ulcerative Colitis flare. It's simple to make and easy on your digestive system, it may quickly become a weekday staple in your household!

1 egg white, lightly beaten
2 skinless chicken breasts
3 tbsp sesame seeds
1 tsp sunflower oil
½ cucumber, thinly sliced on the diagonal
2 tsp caster sugar
2 tbsp white wine vinegar or rice vinegar
1.) Pre-heat oven to 200C
2.) Season the egg white with salt and pepper
3.) Cube the chicken into bite-sized chunks
4.) Dip the chicken in the egg white mixture and lightly toss in the sesame seeds
5.) Lightly oil a baking sheet with the sunflower oil, bake for 20-25 minutes turning chicken once until fully cooked
6.) Spiral or slice the cucumber and place in a colander. Sprinkle with salt and leave for 5 minutes to drain excess fluid
7.) Pat the cucumber dry with kitchen paper (paper towel)
8.) In a bowl, mix the caster sugar and white wine vinegar. Toss with the cucumber.
9.) Plate, serve with sweet chili if you prefer and enjoy!
